Launched by Paul, Mary and Stella McCartney in 2009, Meat Free Monday is a not-for-profit campaign which aims to raise awareness of the detrimental environmental impact of eating meat, and to encourage people to help slow climate change, preserve natural resources and improve their health by having at least one meat free day each week.
If you don't already, then maybe give Meat Free Monday a go and see how you get on. After all, it helps the environment and also your own bod, and we reckon you won't miss bacon for just one day.
Here are some of our favourite veggie recipes that will help keep you full, taste delicious and also up your health.
Sweet potatoes are any potato lovers saviour. They taste better than regular potatoes and are SOOOO much better for you. These crispy sweet potatoes are packed full of beans and spinach that will make your body say "why thank you, this was a nice meal and I feel really good right now." (or something like that).

Our fave Insta foodie, WhyGoWithout, is constantly providing us with some serious food envy over on Instagram. This delish mushroom risotto is super easy to whip up and only takes about 25 mins to make, so there's really no excuse not to try this one out. Plus, it's seriously tasty and you can mix it up using whatever mushrooms you fancy.

Jamie Oliver is always one we can rely on and this veggie chilli with crunchy tortilla and avocado salad is no exception. Packed with delicious flavours and a whopping 29.1g of protein per serving, this is a great veggie dish to fill you up at dinner. Plus, leftovers for lunch the next day. Sorted.

Halloumi is the greatest. No question. Halloumi is the meat of the cheese world - it packs a punch with the protein and also tastes freaking delicious. Whack it in a tasty pickled red onion salad and you've got yourself a meal that would make anyone envious.
