Spaghetti carbonara is such an easy, comforting meal to make at home. The weather is starting to get colder folks, so it’s time to ditch those salads and fill yourself full of pasta and cheese.
Here’s how to make the perfect spaghetti carbonara to impress your housemates.
4 egg yolks
140g pancetta or courgette for veggies (top tip)
50g grated parmesan
2tsp olive oil
1 clove of garlic
Boil the pasta while frying the pancetta in oil for a few mins until nice and crispy.
Add the garlic to the pancetta and in a separate bowl whisk the yolks and the parmesan (leave some for seasoning at the end).
Drain the pasta, but leave a little bit of the water in a cup. Add the egg/cheese mix and a tbsp of the cooking water into the pasta and mix until fully coated and creamy. The heat from the pasta will cook the sauce, so there’s no need to heat it.
Stir in the cooked pancetta and garlic, and serve with the leftover parmesan. Easy.
P.S. Add extra cheese because… well, just because.
Oh yeah, and for any of you chumps who are sitting there saying “where is the double cream?” - I’ve got news for you, proper carbonara doesn’t involve double cream, and only a fool would break tradition and add it in. Peace out.
